Hello! I am so so excited about this post. I grocery shopped this past Friday. As I looked at the old food in my freezer, I saw some leftover pumpkin puree. My daughter made pumpkin bars for Thanksgiving but there was 1/2 cup leftover. She placed the remainder in the refrigerator. Eventually, I placed it in the freezer to avoid spoilage. But I thought when I saw it looming in the freezer that we needed to do something with it so it wouldn't be wasted. Thankfully we did.
This morning, for what we call our "Big Breakfast" I incorporated the pumpkin puree in our pancakes. My youngest child said, "Mom the pancakes are good, what's different about them?" I responded that I used Einkorn Flour and I used the leftover pumpkin puree.
Of course I used the usual other stuff, from really good eggs, vanilla, and the like. Here are some pics of some of the major ingredients I used. Also, my basic pancake recipe can be found on this blog, just search under recipes.
We don't have to waste food. There are so many starving people in the world. We can reuse. Doing so can help us to create so many new recipes. I love cooking and feeding my family and I am sure you do too. So share this post with others as we all remain excited about using our leftovers and enjoying good, healthy, homemade food each and every day!
